Vegan Cookie Dough Truffles
These truffles are the perfect heartwarming treat and go perfectly with a glass of milk, a cup of coffee, or a big ol’ mug of hot chocolate. Or just, like, a glass of water. They’re pretty much perfect for every situation.
200g chickpeas cooked
4 tbsp coconut oil
4 tbsp maple syrup
2 tbsp oat flour
1 tsp vanilla essence
1 tbsp maca & hemp powder (optional)
20g cacao nibs
100g melted dark chocolate
1/4 cup almond nut butter
Add chickpeas to the food processor along with maple, coconut oil, almond nut butter & vanilla. Blend until smooth.
Add the oat flour, maca & hemp powder and blend the cacao nibs, then shape into bliss balls.
Place in the freezer for an hour.
Dip each ball in the melted chocolate and place on a baking sheet.
Return to the freezer for 30 min until chocolate has set. Enjoy! X
