Friends, behold, perhaps my favourite breakfast of all time. Pancakes!
I mean, that's a big statement, but it's true. Pancakes will never go out of style, and the limit for pancake recipes simply do not exist in my books. Banana, Chocolate, Fruit, Plain - there's a pancake for every occasion. Plus, I have a total crush on anything with bananas these days.
Life Changing Banana Pancakes
So, how are these life-changing you ask? Well, they are completely vegan and plant based, made with wholesome ingredients and so dang delicious. Hello, perfect lazy weekend breakfast.
If you want to be extra (like me) you can sprinkle some blackberries for next level pancakes.
3 ripe bananas
1 cup almond milk
1 tsp vanilla extract
1 tbsp coconut oil
4 tbsp oat flour
1 tsp baking powder
Pinch of salt
In a large bowl, mash the bananas and whisk together the milk, coconut oil and vanilla extract.
Add oat flour, baking powder, salt and mix until you get a thick texture.
Heat up a pan with coconut oil on medium heat, then pour two tablespoons of batter in the pan in the form of pancakes. Flip them over, cook for a further 2 minutes until golden. Continue and repeat with the whole mix.
Once the pancakes are cooked, stack them high and serve with blackberries and a dollop of coconut yogurt and syrup for drizzling.
